"Israeli Couscous" is different from regular couscous found at stores. To put it simply, it has "bigger balls." I think that makes the texture more enjoyable than the fine, gritty texture of smaller couscous. It can be found in the kosher section of the grocery store. This is what the package looks like:
Israeli couscous can be prepared like any pasta or regular couscous recipe out there, which I'm sure there are thousands of variations. Here is one way I like mine:
Israeli Couscous with Pine Nuts:
1) Cook couscous in vegetable or chicken broth, with a tablespoon of olive oil, per package directions.
2) Then mix in:
> chopped green onion
> fresh or dried parsley flakes
> roasted pine nuts
> a squeeze of lemon juice
3) Serve as a warm/hot side dish.
