Spinach Salad Variations

To keep spinach salad simple, you can buy prewashed spinach in the salad kit section of your grocery store's produce department. Baby spinach tastes best, and the stems are more edible on the baby spinach variety. If you use fresh bunched spinach, be sure to wash it thoroughly, and remove the stems. Either salad can be prepared in layers or tossed.

#1) "Fruity Spinach Salad" - This recipe was inspired by a yummy spinach salad that my sister-in-law, Sue, brought to a family BBQ. Very simple and super healthy.

Combine the following together in a salad bowl:
     > Spinach leaves
     > Dehydrated fruits, such as strawberries or cranberries
                     ...OR...drained, canned mandarin oranges
     > Nuts: Use glazed walnuts for dehydrated fruit
                     ...OR...use sliced almonds to go with the mandarin oranges
     > Poppyseed salad dressing (use Litehouse for low-fat)
     > A few thin slices of red onion

#2) Traditional "Bacon & Egg Spinach Salad" - To make a "wilted spinach" version, simply warm the salad dressing before adding to the salad. This version is not quite as healthy.

Combine the following together in a salad bowl:
     > Spinach leaves
     > Chopped or sliced hard-boiled (and then chilled) egg
     > Crumbled bits of bacon (pre-cooked and then chilled)
     > Honey-mustard dressing
     > A few thin slices of red onion
     > Croutons (optional)
