This is one of my favorite vegetarian recipes I've made up. It can be vegan and low in saturated fat if you exclude the cheese topping. This meal is satisfying and extremely quick and easy to make.
Cut all veggies stir-fry style for this recipe.
1) Stir-fry in some oil in a wok until veggies are crisp-tender:
> celery
> carrot
> garlic
2) Add these ingredients and heat through:
> cooked spaghetti noodles
> sliced black olives
> 1 can drained garbanzo beans
> fresh tomatoes
> seasonings: salt, Italian herb blend, fresh basil, etc.
3. Optional topping: mozzarella or parmesan cheese (or non-fat feta cheese).
