Chickpea Salad

Toss together in a bowl...
     > garbanzo beans
     > chopped celery
     > diced tomatoes
     > onions (optional)
     > non-fat crumbled feta (plain or herbed)
     > lime juice
     > salt and pepper
     > ground cumin
     > olive oil

Serve this with a "grainy" side, such as bread or couscous, and you have yourself a delicious vegetarian meal!
