I'm just jotting this one down quickly before I forget. The idea comes from a frozen food entree I found at the grocery store, made by a local company. I'll come back later and fine-tune this recipe.
> White hominy, canned
> Sauteed onions
> Poblano (or green) chile peppers roasted, peeled and cut
> Cheesy cream sauce (use Mexican blend cheese)
Top with bread-crumb type topping and bake until topping is crispy.
