I thought I was going to make this completely from scratch, but upon realizing how complicated it is, decided to use the easier route of using pre-made mole sauce paste. And how delicious it turned out to be! For a regular pot, adjust times and amount of water. This can also be made stir-fry style while by cutting chicken into small, diagonal slices.
1) Brown together in a pressure cooker pot:
> chicken pieces
> salt and pepper
> couple tablespoons of oil
Once browned, add 1 cup water and then pressure cook for 14 minutes.
2) Take the pressure cooker lid off, and while still simmering, add Dona Maria brand mole paste (or ready-to-use Dona Maria mole sauce, if available from your store). Make sure it dissolves well and gets mixed in. If desired, sweeten slightly by adding a little bit of white sugar. Add more water, or cook down the liquid in the pot, as needed, to get a gravy-like constistency.
3) Serve with Spanish rice and side of sauteed bell pepper/onion mixture.
VEGETARIAN alternative...
The ready-made Dona Maria sauce also works well for a topping for green chile and cheese enchiladas. Use corn tortillas.
