Fried Rice

Tips for making good fried rice:

1) Use leftover rice so that it's dried out a little and not too sticky.

2) For the egg, beat the eggs lightly in a bowl with a little water. Then pour into a very hot pan/wok (that has oil heating up) and let it spread out thin in the pan/wok, almost crepe-like. Chop up the egg with your spatula and set aside for the recipe.

3) Don't overpower the rice with the ingredients. Cut up your ingredients small and use a balanced amount (not too much).

4) Start by frying the rice in hot oil. Once it's tossed around and not sticky, then start adding the other ingredients and cook everything through.

5) Use pre-cooked meats.

6) Toss green onion in last just before serving.

7) Be generous with the soy sauce!

Cheryl's Standard Fried Rice
     > oil for sauteeing
     > pork, bacon, or tofu
     > rice
     > egg
     > tomato
     > green peas (for frozen peas, allow them to thaw out a bit first)
     > mushrooms (saute ahead of time)
     > green onion
     > soy sauce


Julieta's Fried Rice
     > oil for sauteeing    
     > rice
     > egg
     > carrot*
     > cabbage*
     > chicken
     > green beans*
     > green onion
     > salt, pepper, and soy sauce for flavor
*stir-fry these ingredients first and set aside.
