This meal is so simple, but I'm writing it down so I don't forget.
Pour oil on bottom of casserole dish and throw in chopped onions and salt and pepper. Heat in oven until onions start to become clear. Add on top, chicken thighs, then a jar of apricot preserves over chicken. Half way through baking, stir everything up, then finish baking.
Serve with mashed potatoes and peas.
