Sorry, another recipe with no pictures....I don't have a smartphone and am always too hungry to dig out my old Polaroid digital camera.
This dinner is quick, simple, cheap, and heart-healthy.
1) Stir-fry together in olive oil:
*andouille chicken sausage (can omit the meat to make it vegetarian, but add more spice)
*onions
*bell pepper
*cajun seasoning blend
*salt and pepper, as desired
*(optional - canned/drained pinto beans or other beans of choice; add beans towards the end)
2) Add prepared "dirty" rice: Saute rice in olive oil with red New Mexico or California chile powder (NOT "chili" powder), then cook as usual with water, adding chicken bouillon cubes (one cube per cup of water)....use about 1 part rice to 2 parts water. Blend the cooked rice with other ingredients and stir-fry some more to get a little crispiness to the ingredients.
Serve hot sauce as a condiment in case anyone wants to add more hot spiciness to it. It's better to cook this meal with too little spice than to start out with too much spice. This dinner would probably also be good garnished with "chow-chow."
Great with a corn-on-the cob on the side. Or....????
