This dinner is quick and easy.
1) Season chicken thighs with a sprinkling of: salt, pepper, and ground chipotle pepper.
2) Bake in a 400 degree oven until done (about a half hour???). Then chop the cooked chicken thighs and use as a filling for the quesadillas. If desired, add sautéed peppers and/or onions to the mix.
3) Assemble the quesadillas (folded in half, sandwich style, with grated cheese and the chicken in the middle) on a cookie sheet and bake them in a hot oven until the cheese is melted and the tortillas are slightly golden. NOTE: these can also be cooked in a skillet griddle-style.
4) Cut each quesadilla into 2 or 3 triangle wedges when serving, and add desired condiments. For a dinner meal, include traditional Mexican side dishes, such as Mexican salad, corn, refried beans, etc.
