Lemon-Pepper and Dill Salmon

Bake salmon filets in oven at 350F or 400F for several minutes until almost ready. Switch oven to broil. Season tops of filets with lemon-pepper seasoning, dill (fresh chopped or dried herb), and melted butter. Broil for a minute or so until salmon is finished cooking and top surface is crispy. Fish is finished cooking when it flakes with a fork.

Serve with a side of rice or potatoes.

Vegetable side:
Pickled English Cucumbers
Peel a seedless "English" cucumber (the kind that is long and wrapped in plastic at the grocery store). Then slice the entire length of cucumber into very thin slices, about 1 to 2 mm thick. Place the sliced cucumber in a bowl and add a splash of white or cider vinegar. Then season with salt and sugar to taste. The juice mixture should be a pleasant combination of sweet, salty, and sour, according to your preference.
