I present here a quick & easy way and a homemade version of this recipe. I believe the ultimate cost for both versions will end up being about the same. The homemade version will obviously take much longer to make, but might be tastier.
Quick & Easy:
1) Start with 1 bag of ready-made brocooli slaw salad kit
2) Jar of Coleslaw dressing (Stir in just enough to get the right amount of moisture)
3) Mix in some Craisins (dried cranberries)
Homemade:
1) Shred together: carrots, red cabbage, and broccoli stems (skins peeled off). An option is to use green cabbage instead of the broccoli. Another option is to use the broccoli florets instead of stems.
2) For dressing, mix together olive oil mayonnaise, apple cider vinegar, and sugar. Go easy on the sugar and vinegar; it doesn't take much. If desired, season with salt, black pepper, and mustard seed.
3) Mix in Craisins (dried cranberries).
VARIATIONS TO BOTH VERSIONS -
1) Mix in walnuts or cooked bacon crumbles.
2) Use raisins instead of Craisins.
3) Mix in diced apples.
