Tomato Pesto Salmon

For the salmon, use tail end of fish fillet whenever possible, since it will be hard to "fish" out the bones through the tomato topping. The further away you get from the tail, the more bones you encounter. A brand of tomato pesto that tastes good is Bella Sun Luci.

1) Prepare salmon in a baking pan with layers spread on top of the salmon fillets:
     > olive oil mayonnaise
     > then sprinkle Italian seasoning blend
     > then tomato pesto on top.

2) Bake at 350°F or 400°F, depending on how fast you want it cooked.

Serve with a pasta side dish and asparagus.
